Sriracha Chicken and “Fried Rice”(Riced Cauliflower)

One night I was looking for something healthy and tasty that would fill me up. I have had riced cauliflower before, and although the texture is similar to rice, it is kind of tasteless. I decided to whip something up and it turned out being quick and flavorful and only 400 Calories for the whole serving!


For Two


1 bag frozen riced cauliflower

1 pound of chicken breast cutlets

1 teaspoon olive oil

1 tablespoon low sodium soy sauce

2 teaspoons of season salt (I used Trader Joe’s seasons salt)

2 teaspoons of Sriracha (for topping)


  1. Cook bag of riced cauliflower according to instructions on the bag
  2. Place chicken on cutting board and cover with plastic wrap. Pound chicken until flat to tenderize
  3. Heat up a skillet with olive oil
  4. Cook chicken until golden with season salt
  5. Throw in cooked cauliflower
  6. Stir with chicken and pour in soy sauce
  7. Cook about 5 minutes
  8. Serve with sriracha chili sauce
  9. Enjoy!
